Blue cheese is a type of cheese which contains edible mold. The presence of this edible mold creates a texture of green blue spots and veins, thus giving the cheese a blueish hue. Primarily, blue cheese is made from cow milk; however, some varieties are produced using goat or sheep milk. The edible mold added to the milk which provides the cheese with its distinct texture is Penicillium roqueforti.
